This creamy peanut butter and honey smoothie is made with frozen bananas, cashews, peanut butter, oats and sweetened with honey. It’s a creamy, decadent and tasty way to kick off your day!

Did you indulge too much over Christmas? I know I did.

I made this recipe on Boxing Day when I was feeling really lethargic, heavy and just plain “meh” after the Christmas day feasting.

I wanted to start the day healthily but didn’t feel like my normal green smoothie. This smoothie is so good because it doubles as breakfast but is so creamy and indulgent, it kind of feels like dessert.

The cashews and oatmeal ensures you’ll feel full for hours and the flaxseeds, LSA and chia seeds sneak in lot’s of goodies to maximise the nutrition value.

Although it’s not the holidays anymore, it won’t be long before another Monday rolls past and you might need to kick off a week of healthy eating to make up for it. Am I right?

What you need:

  • Blender

Ingredients (makes 2):

  • 1/2 cup cashews, soaked
  • 2 cups almond milk
  • 1 banana, frozen
  • 2 tablespoons organic peanut butter
  • 1/4 cup steel cut oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla powder or extract
  • 1-2 tablespoons organic honey or maple syrup
  • 1 tablespoon chia seeds
  • 1 tablespoon LSA
  • 1 tablespoon flaxseeds

Method:

1. Blend all the ingredients in a high speed blender until smooth.

2. Dust with cinnamon and chia seeds and drink immediately.

Storage: in an airtight container in the fridge for one day.
