Soft melting moment biscuits stuffed with a tart lime cream. A slight twist on a traditional favourite recipe.

Recipe for Lime Cream Melting Moments by Anisa Sabet for The Macadames. 

This is a super easy recipe for melting moments with a twist by adding a tiny bit of lime to the cookie dough and filling. I love the beautiful tang they have. What’s your favourite way to have melting moments? I think I might try stuffing them with chewy caramel next time.

What you need:

  • Large baking tray lined with baking paper
  • Stand mixer

Ingredients (makes 32):

  • 250g butter, cubed
  • 1/3 (55g) cup icing sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 & 3/4 (260g) cups plain flour
  • 1/3 (50g) cup cornflour
  • Zest of 1 lime

For the filling: 

  • 120g butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1 & 1/3 icing sugar, sifted
  • 1 teaspoon lime juice
  • Zest of 1 lime

Method:

1. Preheat oven to 160°C. Line a baking tray with baking paper.

2. To make the dough: Cream the butter, icing sugar and vanilla extract in your stand mixer until creamy and pale. Sift in the flour and cornflour and beat on the lowest possible speed until just combined and a soft dough forms.

3. Flour your hands and roll dough into small balls and place onto the prepared baking tray approx 5cm apart. Use a floured fork to flatten each one until it’s approx. 1cm thick. Pop into the oven to bake for 13-14 minutes. Pull out of the oven and allow to cook for 10 minutes on the tray before removing to a wire rack to fully cool.

4. To make the filling: Beat together the filling ingredients

Storage: cookies will keep in an airtight container at room temperature for up to a week. Assembled cookies should be eaten within 2 days.
