Little baked apricot, cranberry and sesame bites, perfect treats for a dessert cocktail party!

Today’s recipe was something I threw together when shooting for Alison Jackson, an amazing Canberra local silversmith. She designs and makes her own jewellery and tableware. These are her little spoons which are perfect for any kind of dessert or breakfast but also make lovely little canapé spoons. I tried a few savoury canapes but these sweet little bites were my favourite. I love the combination of apricot and cranberry, both which go nice and caramelised after baking in the oven. Ingredients (makes 24):
- 12 apricots, halved and de-stoned
- 1 jar cranberry sauce
- Toasted coconut
- Sesame seeds
1. Preheat oven to 200°C. Place your apricot halves on a baking tray and fill each half with cranberry sauce. Pop into the oven and bake for 45 minutes until the edges have caramelised.
2. Just before serving, sprinkle over the toasted coconut and sesame seeds.
Storage: bites will keep in an airtight container in the fridge for up to 5 days.
