Recipe for Lamb Sliders With Beetroot Relish, Labneh Tzatziki On Brioche Buns by Anisa Sabet for The Macadames. 

This is a recipe I developed for Australian Lamb and their Spring campaign. I returned from Europe with a distinct change in the air; longer days and warmer temperatures. Spring has arrived and I couldn’t be more excited
about it.

Today, I am sharing a very easy (but soooooo tasty) lamb slider recipe. The patties are stuffed with herbs & spices, plus a bit of chili for an extra kick. This also includes my secret ingredient for all burger patties – a good shaving of fresh nutmeg. Honestly, try it. It’s the best ever!

I’ve paired the lamb with a labneh tzatziki and beetroot relish, which complements the flavours perfectly. For this recipe, I’ve used lettuce and fresh mint leaves for greenery but any micro greens would work too. For a killer springtime meal, serve these lamb sliders with a side of crispy sweet potato fries and an ice cold ginger beer. I used this post for ensuring I got the fries SUPER crispy and I love how they turned out.

Ingredients (makes 8):

For the burger patties:

  • 500g lamb mince
  • 1/2 red onion, finely chopped
  • 1 teaspoon minced garlic
  • 2 tablespoons fresh mint, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground all spice
  • Few grates of fresh nutmeg
  • Good pinch chilli flakes
  • Good pinch of sea salt
  • 1 medium egg
  • 1/4 cups bread crumbs

For the labneh tzatziki: 

  • 175g labneh
  • 2 tablespoons greek yoghurt
  • 1 Lebanese cucumber, grated or finely chopped
  • 2 tablespoons finely chopped fresh mint
  • 1 teaspoon minced garlic
  • Good pinch of sea salt

For the sweet potato fries: 

  • 1 large sweet potato, chopped into fries
  • Olive oil
  • Sea salt

For the burgers:

  • 8 brioche slider buns, lightly toasted
  • Butter or olive oil
  • Lettuce
  • Beetroot relish
  • Mint leaves

Method:

1. To make the burger patties: In a food processor, pulse the burger pattie ingredients until it just comes together, shape into 8 patties then pop into the fridge to chill for 30 minutes. Fry in some olive oil for approx 2-3 minutes on each side until just cooked through.

2. To make the labneh: In a bowl, mix together the labneh tzatziki ingredients, set aside.

4. To make the burgers: After toasting, lightly lather each slider bun with butter or drizzle with olive oil. Layer your burgers as you wish. I did labneh tzatziki on the bottom side of the bun, then lettuce, then lamb pattie, more labneh, a few mint leaves and beetroot relish on the top side of the bun.

Storage: lamb patties will keep in an airtight container in the fridge for up to 3 days or the freezer for up to 3 months.
